Occasionally, I stumble upon a life hack that makes me wish I'd known it years ago. This is one of those gems. It's so simple, yet it's been a total game-changer for me, and I think it could be for you too!

I like fruits and vegetables, but I have always struggled to consume the recommended daily servings. Growing up, we were encouraged to eat veggies with each meal. However, it was a new era of convenience foods, so canned foods were the go-to solution. Also, school nutrition lessons only included memorization of the food pyramid. So, for many reasons, I developed less-than-ideal habits regarding attitudes about fruits and vegetables.
I tried to step up my veggie game when I became a mom. It was challenging, for sure! I had one child that would eat salad and another that wouldn’t even be in the same room as a vegetable! So, food was a constant source of friction.
Fast forward to recent years, a health issue compelled me to take a hard look at my gut health. I was forced to change how I eat, prioritizing fresh, plant-based, organic foods. In the early days of changing my eating habits, I struggled with adding variety to my meals because I had also removed all processed foods.
That’s when my functional health RN shared a tip that changed everything: incorporate Veggie Hash. At the time, I had no idea what that was. But now, I can’t imagine meal prepping without it. It’s genius!

I learned to make two versions: one mild version that's practically flavorless and one with a little more kick (hello, onions!) that adds a delicious twist to dishes like meatballs.
